Kevin Fernandez, who has long served as sous chef to Michelin-starred chef and former chef Martin Dalsass, will take the helm alongside his partner, Lisa Carlevero, at the renowned establishment.

Housed in a charming Engadine-style building from the 17th century, the Talvo restaurant has been a mainstay on the Engadine gourmet scene for decades.

A Rich Culinary Legacy in a Historic Setting

Originally put on the map by Roland Jöhri and later awarded a Michelin star under Martin Dalsass, Talvo earned acclaim for its Mediterranean cuisine, drawing diners from far beyond the region.

Fernandez, hailing from a family of Spanish restaurateurs, aims to refine Talvo’s culinary identity with a new menu. His focus is on contemporary Mediterranean dishes, complemented by vegan and vegetarian offerings.

Fresh Vision with Mediterranean Roots

Highlights include creative reinterpretations of classic dishes as well as tributes to Dalsass’ famed creations. While embracing a modern approach, the new concept remains deeply rooted in the restaurant's tradition.

Lisa Carlevero, an experienced hostess, brings her passion for personalized service and hospitality to the venture.
